I’m so excited to be back with another meal prep download – this time in a special collaboration with my bestie, Audree Lopez. (More details below!) On the menu this week – Quick Chili, BBQ Chicken Stuffed Roasted Potatoes and a Shaved Brussels Sprouts salad with winter citrus that you’ll crave all week. These three recipes can be mixed and matched throughout the week so if you’re hesitant about leftovers, just know the options are big here!
MIX IT UP
Try the chili over the roasted sweet potatoes, cut up a potato and toss it into the salad or put a poached egg on top for breakfast. The Brussels salad holds up incredibly well throughout the week, so even if you make it Sunday night, you’ll be set by Thursday. I ate this all last week and one of my favorite parts – the TOPPINGS! Go allllllll out with the Greek yogurt, tons of lime juice, flaky sea salt and cilantro on BOTH the chili and the BBQ Chicken + Potato.

I immediately knew I wanted to make something I would make for Audree if she came over for dinner. The meals are a little bit southwestern-inspired – perfect for us two Arizona gals in the city! Audree and I had the chili for dinner the other night, loaded up on the toppings, sipped a little hot toddy and felt super cozy on a winter night. I think you’re going to love it, too!
