Lemon pepper salmon, easy chicken curry, mushroom and pork pasta sauce, plus sweet and crunchy tuna salad are the stars of the show in this week’s new meal prep download. In the first meal prep download, I offered mix and match options for you to combine throughout the week. This time, it’s all about recipes that have become favorites in my own meal prep rotation. If you don’t want to have to think about what you’re going to eat for breakfast, lunch and dinner all week, this guide is for you!
The colors, flavors and textures of these dishes get me SO excited. The beauty of the curry and mushroom pork sauce is that they truly get better throughout the week. Simply warm up with your favorite pasta, grain or veggie base and you’re all set. These recipes are inspired by Whole30, so they are full of protein, healthy fats and veggies. Skip the oatmeal if you are during Whole30 and add in your favorite egg breakfast.
Basically everything except potentially curry paste can be found at your local Trader Joe’s… my favorite as you know! Pictured above is what my cart looked like as I shopped for this meal prep. I had about half of the grocery list already in my fridge, and you probably do, too. The rest of the items costed me less than $50! I would say that’s not too shabby for three meals a day for five days, plus a Sunday dinner.
