Happy November! I am so excited for the holiday season because it means lots of food. Between holiday parties, get togethers with friends, office potlucks and family gatherings, it seems like there is always a need to pull something together quickly to bring along. This jalapeño cilantro hummus would be perfect as a colorful, flavorful and even healthy appetizer. It takes only 5 minutes to whip up (really!) and only uses six ingredients not counting the staples of salt, pepper and olive oil.
This feels like a good recipe for healthy snacking again after all the Halloween candy from last night! I hope you all had fun with friends, neighbors or little kiddos. My friends and I wanted to watch a suspenseful movie, but realized the whole version of The Girl with the Dragon Tattoo on Netflix was in Swedish! Instead we watched Spotlight and I sipped a pumpkin beer (my adult version of Halloween celebration haha)! Have you all seen the movie? It was very good, but very thought-provoking.
I was trying to write this blog post while watching the movie, but was so hooked I couldn’t focus on describing this simple recipe! Originally, I was inspired to make this batch from my favorite Trader Joe’s hummus. I was buying their version about once a week, and figured it would be a little more economical to learn to make a bigger batch at home. All you have to do is take my roasted red pepper hummus recipe and swap the roasted red peppers for two jalapeños and one bunch of cilantro. Done! I left the seeds in one of the jalapeño and WHEWF I’m feeling the kick, but it’s delicious. If you like more mild flavors, you could use only one jalapeño or both jalapeños, just de-seed both.
Once you blend the ingredients together, you’ll get this gorgeous smooth, vivid green hummus like below. The recipe makes for a pretty generous batch – enough for your family to share for a few days, but I wouldn’t keep this around for too much longer than a week since there are no preservatives. I just read that you can freeze hummus though, so I’m going to give it a try with this batch and report back!
- 1 can garbanzo beans, drained and rinsed
- 2 jalapeños
- 1 bunch of cilantro
- 1 tablespoon tahini
- 1 clove of garlic
- 1 lemon, juiced
- 1 teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup olive oil, or more as needed
- Cut the jalapeños remove the inner seeds to decrease the heat of the peppers. (Leave seeds in one jalapeño if you like spice!)
- Add seeded jalapeños and all ingredients to a blender or food processor. Pulse or blend on high until smooth. If texture is too thick to blend easily, add another drizzle of olive oil or a teaspoon of water to smooth.
- Serve with crackers, pita bread, naan or vegetables. Enjoy!
