Peppermint Chip Frozen Yogurt

  • 1 cup heavy whipping cream
  • 2 cups plain yogurt
  • ¼ cup agave
  • ¼ cup sugar
  • red food coloring
  • 2 teaspoons peppermint extract
  • ¾ cup semi-sweet chocolate chunks, reserve ¼ cup for topping, chopped
  1. Begin whipping heavy whipping cream with a hand mixer or blender and continue blending until stiff peaks form (about 1-2 minutes).
  2. In a medium-sized freezer safe bowl, mix yogurt, agave, sugar, peppermint extract and red food coloring.
  3. Fold in half of the whipped cream until incorporated. Add second half of whipped cream and fold.
  4. Fold in ½ cup of chocolate chips.
  5. Smooth and sprinkle remaining ¼ chocolate chunks on top.
  6. Freeze for 4-8 hours and serve!
