Green Chile Breakfast Tacos

  • 3 eggs
  • 1 teaspoon olive oil
  • 1 can of green chiles, only use about two tablespoons
  • 2 tortillas, flour or corn
  • ⅛ teaspoon salt
  • Pinch of pepper
  • 2 tablespoons shredded cheese
  • Your favorite hot sauce (optional)
  • Chopped cilantro for garnish
  1. Beat 3 eggs. Season with salt and pepper.
  2. Warm pan over medium heat. Drizzle with olive oil.
  3. Add eggs to pan. Cook eggs, stirring gently.
  4. Add green chiles once eggs are halfway cooked.
  5. Warm tortillas in the microwave for 10 seconds.
  6. Add scrambled eggs to tortilla.
  7. Garnish with shredded cheese, hot sauce and chopped cilantro.
