Southwest Kale Salad

Serves: 1 salad, plus extra dressing
 
Ingredients
  • Salad
  • Black beans
  • Diced mango
  • Corn
  • Avocado
  • Cherry tomatoes
  • Baby kale
  • Your choice of protein (optional)
  • Dressing
  • 1 large bunch of cilantro leaves, stems removed
  • 1 clove garlic
  • ½ teaspoon red pepper flakes
  • ½ cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 2 tablespoons red or white wine vinegar
  • Juice and zest of 1 lime
Instructions
  1. Add all dressing ingredients together in a blender or food processor. Blend until smooth.
  2. Mix all salad ingredients together with proportions as you would like.
  3. Top with dressing and serve! Refrigerate leftover dressing in a Mason jar or container.
