Cantaloupe, Prosciutto and Arugula Salad
 
A fresh and simple salad for summer bursting with flavor.
Ingredients
  • 1 medium cantaloupe
  • 8 oz baby arugula
  • 6-8 thin slice prosciutto
  • 3 tablespoon white-wine vinegar
  • 1 clove garlic
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup olive oil
Instructions
  1. Combine vinegar, honey, mustard, garlic, salt, and pepper. Whisk continuously while slowly adding olive oil.
  2. Place arugula on a platter. Top with cantaloupe, prosciutto and drizzle with vinaigrette.
